Hate, because he's the author of phenomenally popular cookbooks - - including the new "Top Secret Restaurant Recipes 2" (Plume, $15) - - that feature painstakingly re-created recipes for restaurants' famous dishes that allow people to make the dishes at home.

Reconstructing Food

Love, because, well, any publicity is good publicity.

"Oh, they love me!," says Wilbur, laughing.

"I'm sure they're more concerned about other chains, who copy their stuff all the time. When Outback came out with the 'Bloomin' Onion,' next thing you know, Chili's has the 'Awesome Blossom,' Lonestar Steakhouse has the 'Texas Tumbleweed.' Then someone figures out that everyone loves spinach artichoke dip -- boom, it's on every menu."

A few restaurants have adopted an "If you can't beat 'em, join 'em" stance towards Wilbur. Kentucky Fried Chicken sponsored Wilbur's last book tour.
